What is the point in having 2TB storage of iCloud if it’s only going to use my iPhone storage.... I’ve had the 2gb storage since I got a new phone

It doesn't use your entire device storage which is why it's recommended to utilize the Optimize Phone Storage feature -- Manage your photo and video storage - Apple Support.
