If you purchased your iPhone directly from Apple they should have been providing you with a number of emails informing you of where it is in the process and should provide you with a tracking number.
Did you actually contact Apple, via the link I provided, and they couldn't assist you with this?
It is my understanding that Apple may be having issues keeping up with orders for the new iPhone 12 models. The Order Status does not specifically call out "Processing" as one of its order status steps. It could mean that it would be somewhere between the "Order Received" and "Open" steps. That would also mean that they don't have a shipping date available to provide to you. So, unfortunately, your guess is as good as any we (fellow Apple-product users) can tell you.
