How to update firmware for macbook air os catalina 10.15.7

I am understanding that you would like to update your MacBook Air from macOS Catalina to macOS Big Sur. Is that correct? If YES then open System Preferences ➔ Software Update : Your MacBook Air will check for updates and then involve you to begin the updating process.

Not sure I explained the problem very well. I would like to use my Canon scanner with my 2018 macbook air. The CanoScan 8800F worked well with my earlier macbook. The scanner app message said to upgrade the scanner firmware to work with this iOS. Upgrading to an even later version of iOS will likely not solve the problem. Thanks for your reply.
I understand now. The Canon Scanner needs an update to work with the iOS version that is installed on the MacBook Air. You will need to refer to the owner's manual of the scanner to determine how to update the scanner's firmware. Its either that or you can go to Canon's website and use that support site for your Canon product.
