iCloud mail stuck in outbox

@icloud mail stuck in outbox. Outgoing server seems to have switched to my 'gmail' account (maybe when upgraded to BigSur?). How do find and enter the correct outgoing server ie smtp.mail.me.com?

Apple Emails not sent on iPhone or iPad. No access to SMTP server - goes straight to Apple ID YouTube videos do not cover how to re-set server for Apple email. Instructions for Gmail are clear but not able to edit/add/change user name or password info Apple does not give server settings access Option to type in user name etc are grey, so not doable. Outgoing mail server says iCloud is off line In the Account Information Outgoing Mail Server says: iCloud is offline. But apple says it is on line, any suggestions to fix? All of a sudden I can't send email but can receive it.
