Apple Emails not sent on iPhone or iPad. No access to SMTP server - goes straight to Apple ID

YouTube videos do not cover how to re-set server for Apple email.

Instructions for Gmail are clear but not able to edit/add/change user name or password info

Apple does not give server settings access

Option to type in user name etc are grey, so not doable. Please help
