I have been experiencing the lag issue when I open up a text message and start typing... It just started with this new update... I have a 11pro, not even a year old yet!! HELP!!!!

I’ve restarted my phone NUMEROUS TIMES and it still has the text lag when I initially start to type... THIS IS RIDICULOUS!! The phone is 9 months old!!
There's no need to shout. I understand your frustration, but since you didn't specify what troubleshooting steps you already performed, I started with the basic ones.
That said, something could have gone wrong during the latest update procedure.
I would try to install a fresh copy of iOS. To do this, create a full backup of your iPhone (1), then restore it to factory settings (you need a computer to perform this step) and, in the end, set it up as new (2).
When done, restore data from your previously made backup (3).
