hi,
I was downloading xcode from the app store. (on big sur, m1)
After a while I wanted to stop the download (it was really slow) so I clicked on the stop icon (on the app store), nothing happened so I went to the Application folder and deleted xcode.
After reboot the xcode icon was gone but when i try to reinstall xcode the icon appear again in the same "installing" state.
Can you help me please?

Yes waiting did help. I was using Norton Security so I had to uninstall that as that got in the way and was the reason for the XCode installation crashing the computer. But make sure you don’t have any third party security software on your MacBook. Just press install and let it run mine took about 1.5 hours to 2 hours. 👍

I've just waited and it finished installing after a few hours.
The only thing i did at first was long press on the xcode app icon in the launchpad, click on the x to delete the app, go to the application folder to be sure xcode is not there, restart the computer, open the app store again and click on the xcode download play button, then just wait.

Same for me. Whenever I restart my computer the download resets but then when I try to reinstall it, it goes back to where it was before. I've tried downloading it off of apple's dev page but the download freezes as well. Is it normal for it to be frozen for 5 hours?

I see that waiting some hours worked for pich127, but did waiting work for you as well? I'm having the same issue on MacBook Pro 13" M1, also went through the stop-install, delete, try re-installing experience. Just beginning the hours-long vigil with hopes that it will eventually succeed.
Now the bar it seems moving. It's really slow but is almost complete. Maybe I should've just waited. We'll see.
Did it work for you? I am experiencing the same exact issue. When the bar moves to 95% approx. it freezes then crashes my computer. I am operating on MacBook Air 2020
