are you using iCloud notes?

I think you need to use iCloud notes or 'On My iPhone' notes.

I just tested by enabling my Gmail account notes, creating a new note and the checklist option was not available

that’s it! I checked in settings and it was on iCloud but when I checked the actual app it was on gmail notes. Thanks!
