Hi

I actually encountered this problem 3 days ago when I updated my wife's iPhone to IOS 14.3. Her watch app on her iPhone XR would not function. I had to call Apple support who after diagnosing her problem recommended that I back up her iPhone & do a factory reset on both devices ie her iPhone & Apple Watch SE. Fortunately they guided me through the painful process. After resetting and restoring my wife's iPhone I managed to pair her Apple Watch again and its working fine now with the new IOS. If this is a bug in the latest IOS upgrade I do hope Apple comes up with fixes soon otherwise I will hesitate to upgrade my iPhone to IOS 14.3

I had my Apple Watch for one day before I did the upgrade 14.3. It initially paired just fine initially, and then would no longer work after the upgrade. The app on my phone would have a grayed out glitch and would not actually open. I called Apple, as well as physically going in, and they said that erasing all of the contents and doing a reset from the iCloud is the only way to fix this problem. The man behind the counter also said that he does not upgrade until after a month and a half of a new upgrade being released. He said it’s just safer that way. Resetting soon. Fingers crossed!

What you aren't taking into consideration is that there are millions of us using iOS 14.3 without any such problem. 80+% of the iPhone userbase that can update to 14.3 have done so. There may be some of you, with various issues, but this isn't widespread. It is more likely that the issue lay in your own kit. When you unpaired both the iPhone and  Watch and did a factory reset, you deleted temporary files, corrupted files and then reindexed the filing system on both devices, which may well have eliminated the issue.
