I had the same problem. Tried with my other Apple Watch and it worked. I reset the watch that was not connecting, repaired it with my iPhone, and now it works perfectly.

apple watch shows connecting to apple tv but never connects It just constantly shows connecting. It worked the first time after about 5 attempts but hasn't connected since.
