i keep getting a storage full message but it won't let me remove things like email that i don't use on the watch. how can i remove such things?

Is it possible to remove things such as email from my watch to free up space?

I would do 2 things. First, as fiery jack suggested, unpair your watch (see https://support.apple.com/en-us/HT204568). Second, I would remove the Mail app from the watch, as you are not using it (see https://support.apple.com/en-us/HT204221).

Unpair your Apple Watch via the Watch app on your iPhone.

Then Re-pair your Apple Watch, this deletes temporary and corrupted files

and also clears the system cache freeing up a surprisingly large amount of storage space. And without any loss of data.
