iPod Touch (7th generation) can't update due to disk being full, what disk is it talking about?
Is it a disk on the laptop?

That would most likely be the hard disk on the laptop. But you can update your iPod directly via wi-fi. On the 6 gen iPod (iOS 12) it's Settings > General Software Update. It's probably something like that in iOS 14.
