It is my understanding that the initial Screen in Big Sur where the Log In is presented can not be changed. Perhaps, can send Feedback to Apple making suggestions
I looked up images of Big Sur and it is beautiful, Why is the OS screen so ugly? What did Apple stay from an image that reflected the OS name?
Actually, CrabWhisperer, I’m reasonably certain the Big Sur graphic image is an artist’s impression of someplace along the Big Sur coast, probably at sunset.
I agree that it’s not for everyone. (I certainly don’t use it for my Desktop background.)
For Single-User Macs, there is a solution, but it doesn’t work for Multi-User systems—even just having the Guest account available nullifies the solution. (One also has to have FileVault disabled.)
The Single-User solution takes advantage of the way macOS skips the initial (Login or User Selection) screen when it detects that it is set up for a Single-User.
Even in Multi-User setups, once a user has been selected from the initial (Login or User Selection) screen, that screen should be replaced by a version of the chosen user’s Desktop picture: this is called the Lock Screen, for that user.
Unfortunately, even this functionality doesn’t seem to be universally present.
