Can someone confirm whether iCloud automatically backups your data (photos, docs, messages (if enabled)) without any user intervention ? Can you manually backup all data as mentioned previously ?

Automatic backups occur when the device is plugged in to power, connected to WiFi, and locked.

Yes - Settings > Name > iCloud > iCloud Backup > Backup Now.
