Paired my Apple Watch 7000 series to my new Apple 12 Pro. But as soon as I leave home and there is no WiFi the watch can’t find the phone. Is there a way of connecting only thru Bluetooth? Keeps asking for both WiFi and Bluetooth, help please

Thank you for your reply. So my watch was only connecting to my new phone via WiFi and so when I left home WiFi there would be no connection between them. Then I realised that I hadn’t completely erased and deleted my old phone that the watch had been connected to before. Once that was done, my watch connect thru Bluetooth only and I haven’t had a problem since. Hope this helps someone else.

So that we're on the same page, please let us know more about what's going on exactly. What do you mean when you say your Watch isn't able to find the iPhone outside of Wi-Fi? Which step are you attempting exactly?
Are you attempting to use your Apple Watch without Wi-Fi enabled? If so, it's important to note that you'll want to keep Wi-Fi and Bluetooth turned on for both devices to use all features. This guide has more information:
