I just downloaded macos Big Sur and now there doesn't seem to be a way to change the print quality when I print a document. How do I do that?

This would most likely be a function of the print vendor's software, or Print driver. I suggest that you locate the latest driver and install it to see if that restores this function.
The printer driver is up to date. When I click File > Print, I used to be able to change to print quality (Draft, Normal, Best) but now there doesn't seem to be able to change that. I click on "Show Presets" and then "Paper/Quality," and it just says "Econo Mode Off," but there doesn't seem to be any way to change that. Any other ideas?
If you have installed the current Fall 2020 or later printer driver, your work is not done until you reset the print system, remove, and re-add the printer with the newly added driver selected. If you don't do that, you will continue using the older driver.
With your printer powered and connected to the Mac, visit System Preferences : Printers & Scanners, and right-click on your printer entry. Choose Reset printing system… and then when you re-add the printer, select the appropriate printer driver, and click Add. Have you regained quality selection on the print panel with this updated driver, and does the print quality mirror your selection?
