What’s the recommended charge amount? Do I wait until it’s down to 5% or do I just charge it every night?

Other than not letting it discharge completely too often, (best to keep it over 20%), you can charge as often and for as long as is convenient. You do not need to wait for it to be at a specific %.
Most people charge it over night yes.
