Is it possible to control the airpods separately?

I have the airpods pro and I would like one of the airpods pro to have noise cancellation on and the other airpod to allow noise through

No. You cannot adjust them individually. Instead, you'd Level-Out the the balance:

  1. Go to: Settings
  2. Tap: General
  3. Tap: Accessibility
  4. Scroll Down: to Hearing
  5. Adjust: the audio volume balance
