Thanks for being a part of Apple Support Communities. It sounds like both the Apple Maps and Google Maps apps aren't working properly, cutting the beginning of the directions while using Bluetooth. We'll do our best to assist with this.
If you test disconnecting Bluetooth altogether in Control Center, do both apps work properly, when directions are given?
If so, this could be related to the Bluetooth device itself being delayed. Try to remove the device in Settings > Bluetooth and tap the 'i' next to the accessory to 'Forget this Device". You'll then pair the device again: Pair a third-party Bluetooth accessory with your iPhone, iPad, or iPod touch If you have troubles, try: If you can't connect a Bluetooth accessory to your iPhone, iPad, or iPod touch
In case this is related to using navigation in your vehicle, we'd recommend: If you need help with CarPlay
Depending on the Bluetooth device connected, you may need to research if it needs updated software or firmware.
