On a daily basis, my iPhone 12 Mini is switching to silent via the mute button on the side of the phone.

That is what the Mute Button is for, unless you are not getting any notifications at all on a scheduled basis. That would sound as if you have Do Not Disturb set on a schedule. Check Settings>Do Not Disturb. Is Scheduled turned on and does it show a time setting? If it is just the Mute button, turn it off.
Mine seems to be doing this randomly too. Now I am suspecting it is my case. I have the apple mag safe leather case and it gets out of place sometimes..I think when it does it is moving the switch as well. I don’t like this as it’s a $60 case and not as snug/secure as I would expect. Hope this helps.
No pattern to the tripping of the mute switch. Normally once a day and sometimes twice but at random times. Apple engineers are investigating. The fact that the fault occurred on two phones in direct succession suggests to me a faulty batch or something more widespread that hasn’t yet been widely reported, maybe because it’s not a show stopper in user terms.
They replaced the handset but the same issue occurred with the replacement. This suggests it’s a widespread fault that Apple isn’t yet aware of.

Unfortunately, Do Not Disturb is not set on a schedule. In spite of that, the mute button is still switching automatically on a daily basis. Took it to an Apple Store and they weren’t able to identify root cause.

I'm not sure it is a widespread fault, your post is the first and only one I've seen here. Is this change to mute on a regular schedule? Does this happen at the same time period every day?
It could be possible it is something not seen by many, but at least Apple is working on it for you. Good luck with that.
