I always had an option on the Apple Watch to set Do Not Disturb "on until tomorrow morning." Since last update, I no longer have that. It seems to have been replaced with "on until this evening," which is useless to me. Is there any way to get the other option back?

There isn't a way to adjust the amount of time for Do Not Disturb on your Apple Watch. The options available are: On, On for 1 hour, On until this evening, On until I leave, and On until end of event. As a work around you could create an event to end at the time you'd like Do Not Disturb to end, or set it up on your iPhone.
You'll need to have the Do Not Disturb options mirror the settings on your iPhone. Open the Apple Watch app on your iPhone, tap My Watch, go to General > Do Not Disturb, then turn on Mirror iPhone. Then, any time you change Do Not Disturb on one, the other changes to match.

Thanks for the thoughtful reply. It is not the amount of time I want to adjust. There is actually a way to do that in the DND settings on the iphone.
My question was about the change in DND operation after the last update (version 7.2). Before that update, when I set DND from the iwatch I had the options you list, but instead of "On until this evening," I had "On until tomorrow morning," and when I selected that feature, the DND icon (on the iwatch) turned purple. It worked great, but that doesn't happen since the update.
As I've experimented further, it seems that the "on until" options change depending on when you try and set the DND. If you do it during the day, it gives you the "until this evening" option; if you do it in the evening it gives you the "until tomorrow morning" option. Entirely possible that it worked this way before and I just didn't notice.
I've also discovered that when I select the "until tomorrow morning" option it actually sets the DND, it just doesn't turn the icon purple. If you want to verify, you have to look at the phone. That icon DOES turn purple if I do any of the other settings. Not sure why Apple would choose to make one option operate differently but guessing it is just a bug. That's why I hate doing updates--they always seem to break something that was working just fine.
Thanks, that’s useful that it does actually still work. I’ve found the same on both my Series 3 and Series 5 watches. Infect the Series 3 does eventually turn the icon purple after several attempts, but the Series 5 does not.
At least DND until morning does still work.
I have this question as well. I noticed this bug 1 or 2 updates ago. When selecting DND and choosing Until Morning from the drop down list use to turn the half moon DND button purple. It no longer does that. As you note, the DND functionality still works but the button does not highlight like it use to in previous versions. When selecting any of the other drop down options, the button turns purple as expected. It appears to be just the Until Morning option that no longer highlights the button. Very strange.
