I Apple support staff helped me in an issue that I have faced in my iPhone, by enabling a feature which granted them access to control my iPhone.
1- How this is done ?
2- How do I make sure that this remote session was closed?

Go to Settings/General and scroll to the bottom. Tap on Profiles and delete the support profile.
Then it self-deleted. Apple’s diagnostic profiles have a very short lifespan. If you don’t delete them the disappear on their own.

I am using iPhone 11, Software version 14.3 (18C66).
I have clicked on Setting/General and scrolled to the bottom as you mentioned, but there was no “Profiles” option.
