my phone says it's not up to date

i'm trying to connect my iphone 8 to my apple watch series 3. my phone is updated to 13.7 and won't update anymore. The apple watch says can't connect because out of date. I can't update my phone any further.

If you have an iphone 8 it should update to ios14.3;
