Per: Update your Apple Watch - Apple Support
watchOS 6 is compatible with Apple Watch Series 1 and later. Upgrading to watchOS 6 requires an iPhone 6s or later running iOS 13 or later. Find your Apple Watch model.
Which watchOS version is your Watch?
If it's watchOS 5.x.x then you need to pair with an iPhone running iOS 12 or earlier to update your Watch.
After that you can pair with your iPhone SE (2020).
