Many work iPhone plans DO NOT support the Apple Watch as part of the plan.
You should check with your Work iPhone Verizon contacts (I'm sure your company has a contact number).
Obviously if they allow the Apple Watch, you are good to go.
The alternative, is if your iPhone supports Dual SIMs (physical SIM and eSIM), you can get a personal phone number on the eSIM and pair the Apple Watch with that line.

NOTE: A GPS Only Apple Watch will do Everything a cellular model will do As Long As the iPhone is nearby. And you do not need permission from anyone to pair a GPS only Apple Watch to an iPhone.
The other option is to use the Apple Watch family plan, which uses your Husband's iPhone, and gives you your own separate phone number. The downside to this is you are basically treated like the child or elderly parent, with your Husband in total control of your Apple Watch. Also not all features are functional, as sharing items with the iPhone information would not be appropriate, as it is your Husband's iPhone.
