Thanks for using the Apple Support Communities. We understand that you're looking for options to set up VIP and Favorites for your contacts. The articles below will help you with the process.

Use Contacts from the Phone app on iPhone- Add a Favorite

Also, from the Contacts app on your iPhone, select a contact and when reviewing your options here, you should see "Add to Favorites".

Although couldn't locate an option for creating VIP's within iOS, you can do this using a Mac. Check out, Show emails from VIP senders in Mail on Mac for details.
