I only want to hide photos on my iphone not my Mac, how do I do this?

I don't really know how it got this point but all of sudden I could see all the photos on my iphone that are on my Mac. Which is like some 5k photos. I didn't want all those photos on my phone just a hand full of them (20 or so). But now that I've hidden all the photos on my iPhone, all the pictures are also hidden on my Mac. I can go to the hidden folder, but this is does not restore all the folder I had, so I would have to search through all 5k of photos to find one specific one, that I could easily find in a folder.

Like I said, I don't know why any of this happened....but there has to be a way where I can not have all the photos on my phone while my photos are not hidden on my Mac.

MacBook Pro 13″, macOS 11.1

If you are using iCloud photos, this is what it does. It creates an identical library on all your devices.

For a workaround, you could create a smart album using your mac that identifies all the images you want to see on your phone. Since your phone can't show smart albums you would then have to put all the images from the smart album into a standard album. Then just go to that album on the phone to only see the images you want to see.
