I have tons of proof that someone has taken over my iCloud and Apple ID. All my apps say I’m signing into a third party app when it’s just me on my account. How does someone keep signing me up for family sharing when I have no one to share with?

If you believe your account has been compromised, change your password and turn on 2 factor authentication.
If you can't do that, or you still have problems, Contact Apple for help with Apple ID account security

Yes this is way beyond just doing that. I’ve tried everything including account recovery. Everytime I try to create a new email to create a new Apple ID the email address is no longer available to me because it’s being used on another device. I only have one device. It’s just me.
