Transfer from iPhone to iphone

I bought a new iPhone 12mac pro and want to transfer my information before I activate it. When I transfer my data does the old i[hone still have all the data because I still have to use it until I get my new SIM card?

Your original iPhone keeps its data until you erase it as explained in the article linked above.
