How can I sync or control my music playing on my iPhone from my Apple Watch. Not looking to play the music from the iwatch (I understand you need wireless headphones for that) but control functions like skip and play and pause while my phone is in my pocket. Kind of like a remote control. I tried using the Now Playing app but it doesn’t detect the song I’m playing on my iPhone. It just says Not playing.

So based on that image you sent a picture of, it looks like you're almost in the right place. In the Now Playing app you currently have it set to what is playing on the watch. To change to your phone tap that blue arrow at the top left and select the iPhone from the list.

Thanks for the update. Now is your iPhone currently in range of your iPhone? (Bluetooth range is typically around 30 feet.)
If they are near each other, we'd recommend trying a restart on both devices.
How to restart your Apple Watch
Also, when you access the Now Playing app on your watch, do you already have something playing in the Music app on the phone? Or have you not started to play something from there yet?

so I tried to play a song on my phone again and did as directed but when I click the arrow, there is no option to select iphone. See photo. Not sure why since the phone is synced to the watch for everything else.
