I've recently purchased myself a new iPhone, handing the old phone to my son. I have Family Sharing set up, with his iPod as his device - but can't figure out how to add my old phone to the device list. Thanks

You add members to Family Sharing and not specific devices. The devices that are owned by those invited members are then added along.
Open Settings ➔ Apple ID (Your name at Top) ➔ Family Sharing ➔ Add Member.

On your Son's iPhone (your old iPhone), open the Settings App and do you see his Apple ID at the top of the screen? If YES then tap on his Apple ID ➔ Family Sharing : Here you should see all the Family Sharing information including Shared with Your Family and Apple Music.
If the above does not work then have him sing out of his Apple ID and then sign back in again. Shut down the iPhone and Restart it. See whether that resolves things.

As long as his Apple ID is included in Family Sharing AND your son is signed on that particular Apple ID then his device is included.
I know you stated that you were attempting to share music with your son. Ensure that the Music plan that you have allows family sharing otherwise it won't work.

Thanks Axel, I had a chat to the support team yesterday and I now understand that he does have access to the family sharing but will see different things because he’s logged in under his Apple ID. I get it now ;) thanks for persevering with me, you’re much appreciated
Thank you. My son is on my family share list, but the phone isn't listed like his iPod. I have him signed in, using his Apple ID, to the phone, how do I get the iPhone listed in the devices so I can share music with him
Thanks Again Axel, all the above is accurate. His Apple ID is included in Family Sharing and his device is signed into his Apple ID. Apple music is set the family sharing, as hubby can access it and my son was using it on his iPod. Really not sure what's going on ?? in the phone settings it shows his iPhone.
