So I made an order on the 27th of December 2020 for one of the new M1 MacBook Pro’s but my order status has been on processing ever since and the money hasn’t been taken from my account yet. The delivery time says it’ll arrive within 5 to 7 business days. Is this something Apple usually do or should I chase it up?

Based on my past orders, "processing" means the computer is still in the production queue. You will not be billed until the computer is completed ready to ship.
I also find Apple's stated arrival dates quite accurate. You should be fine.

I made my order via Apple Reselller for a MacBook Pro M1 with 16 Ram and 1 TB SSD December 9. I'm still waiting and reseller "best guess" delivery date February 21. What's going on?!!
