Updates used up all my iPad storage so I can’t have anything on it?

How do I delete unused apps that apple preinstalled? They are taking up space that I want for my kindle app. The maintenance updates are using all my storage so all my useful apps were deleted one by one. Now this iPad holds nothing useable? Can I delete unused “standard” apps like, photos, messenger etc? I just want to use it like a kindle...like I have been until the last update. 😥
