2 monitor Support Mac mini

I have a MacBook Pro with 4 USB C ports and I have two LG Superfine 4 or 5k Monitors (both USB C) attached to it,

My question is, Which Mac mini should I buy that will work with those two monitors.

The 2018/2020 Intel Mac Mini has 4 USB-C ports and supports 3 Displays.

1 on the HDMI port and 2 staggered on the USB-C ports

The 2020 M1 Mac Mini has 2 USB-C and only supports 2 Displays,

1 on the HDMI port and 1 on the USB-C ports
