With the newest MacBook models: MacBook/Air and MacBook/Pro
(with either M1 Apple Silicon; or Intel-mac CPU, in either form) you
have choices in hardware, with given performance differences.
Appears the MB/Air and 13-inch /Pro would offer newer M1 option.

Had you looked into Apple (FR) site to see what options there
are, as those could be shipped to you, from an online source.
[As to the question of different keyboard options, QWERTY
