When I go onto the Apple Watch app on my iPhone and click onto Fitness+, it shows “Cannot Connect” and I have no idea why. I’ve tried turning my iPhone off and on again and left it a couple days before trying it again. I’m from the UK so is anyone else having this issue or know why this could be?

Is your Watch running watchOS 7.2?
And your iPhone running iOS 14.3?
You need to update your devices first if you haven't.
What else have you not told us? Some possibilities:

What happens when you go into the Fitness app on the iPhone and tap the Fitness+ tab?

Do you have a valid credit card with your name on it, issued by your bank as your payment info?
Can do download a free app from the App Store?
My Apple Watch is paired to my iPhone and all devices are running the most recent updates (watch: 7.2 & phone: 14.3).
Both devices are using Bluetooth yes and my watch is on my wrist and phone in my hands, can’t get much closer than that
Apologies, this is what I meant. When going onto the Fitness app on my iPhone and then to the Fitness+ tab. The tab works and I can see everything but it’s when I go to click “Try It Free” then I get this
Yes I do, the situation is that I have everything basic all done on my phone, it’s just when I click on the fitness+ part it can’t connect.
This makes me think that Apple are having glitches or something as everything else works fine
No I’m not subscribed, I’d never even heard of it until the other day when I first come across it on the Fitness app. I also would have seen money coming out if so but after checking anyway, no I’m not subscribed
