fitness+ error - apple watch unavailable

I have a subscription to Apple Fitness+, an Apple Watch 6 and iPhone 12 Pro (and an iPad Pro that can't download the Fitness app, but that's a different issue). When I use the Fitness app on my iPhone to start a session (using the "Let's Go" button) it cannot connect to my watch - it first says "Looking for Apple Watch. To show your metrics, your watch needs to be unlocked and have Bluetooth turned on." (yes and yes) then it eventually times out and says "Apple Watch Unavailable"

I struggled with this exact same problem on the iPad. I found this solution on another forum.

First -> Make sure your iPad is updated to iPadOS 14.3

Second -> Open the `Home` app and press continue to initialise it.

When you go back to the fitness app it connects to the Apple Watch when you start a workout.

I had never attempted to use the apple home app, and it appears for some reason some functionality of the home app is required for fitness + on iPad to connect to the Apple Watch.

My devices are iPad Pro (iPadOS 14.3) | Apple Watch (watchOS 7.2)

My iPhone has an update of 14.3. I opened the Home app on my phone and pressed continue and then went back to my Apple Fitness + app on my phone and it still did not connect to my Apple Watch so I can see my metrics when working out.

My bluetooth is on on my Apple Watch and it is unlocked.

Please let me know what else I can do so have access to my metrics while working out - with thanks.
