I upgraded my OS from Mojave to Catalina. How do I upgrade my Microsoft Office? What is the proper procedure I should use to avoid any problems?

Contact Microsoft. The are the Office Suite developer and they would provide you with an updated version that runs on macOS Catalina.

You need to install a 64 bit version of Microsoft Office. Office 2019 and Office 365 are 64 bit versions.
