So my son recently deleted a text thread that I was needing to keep. My last backup was a few weeks ago because I was out of storage. I have since backed up my phone but I am wondering if I am able to go to a backup from before the text thread was deleted to bring those texts back. I have actually successfully done this before but the issue is I am wanting to keep all of the photos I have taken since that backup I am trying to go back to. If they are backed up to iCloud will I lose them if I restore my iPhone to a previous backup?

If you had messages in iCloud turned on Keep all your messages in iCloud - Apple Support and those messages were deleted, then they are permanently gone. If that feature wasn't turned on, you can restore from a backup -- Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.

That’s what I thought. What about photos. I know my phone will return to the same place it was at at the last backup but what about the photos I’ve taken since then that are saved to iCloud? Will they remain on iCloud?

Same principle applies with photos, i.e. if stored in iCloud and deleted, they will be moved to the Recently Deleted folder for a 30-day period before being expunged, and if stored primarily on-device and deleted they can be potentially recovered through restoring from a backup.
