As long as you unpaired it from your original phone before you activated the new phone and restored the new phone from a backup of the old one, the new phone should have the backup of the Watch. See this about pairing to the new phone. How to pair your Apple Watch with a new iPhone - Apple Support

You mean you were not able to transfer the information from the old iPhone to the new one, and you set the iPhone up as new, not from a backup? If so, then you are going to have a problem. If you do not have a backup of the Watch, then when you remove it from the old pairing, you will lose data, but you are going to have to do that to be able to pair it to the new phone. Did you consider replacing the screen on the old phone. Or, how old was the last backup you had on the old phone?
Correct. Unfortunately, I recently upgraded my watch also and did not back it up before my screen died. They want $300 to replace the screen on the old Xs, so that’s not an option.
I don’t even know how I can impair the watch in order to pair it with my new phone now.
My old phone’s display died and I wasn’t able to do that.
