My apple watch has not been used for a little while and now will not pair. It requires an update before it pairs but then fails to connect. I have tried several different phones and it still will not pair. From what I can find it requires pairing with a phone that is not up-to-date, however, I have tried. Another option I have seen is to send it in for apple to update?

First update your iPhone to the latest version it can support: Open Settings, tap General, tap Software Update. If there is any update available, please install it. If it tells you that your software is up to date, then you have nothing else to do.
Now, force restart your watch by pressing the crown and the side button simultaneously. Once the watch has restarted, pair it to your phone.
Well, I'm afraid it's time to Get Support directly from Apple. And, if I can reassure you, they are very qualified.
