Watch wont update, and wont finish pairing
My wife gave me her old apple watch, but it won’t update to complete the pairing. It just says to update my phone software, despite it already being up to date.

Sounds like the watch is still paired to your wife's phone;

Follow all the steps on this page,you will need your wife's apple id

To unpair and erase watch and remove Activation Lock
From a web browser,sign in to iCloud.com with your Apple ID.
Go to Find iPhone.
Click All Devices at the top of the screen.
Click your Apple Watch.
Click Erase [device]. Select Next until the device is erased.
