i do not want to reset my watch and lose my workouts this month. I was never notified that there was an iOS 7 update for my watch, it just stopped communicating with my phone January 1st?

You cannot update a watch unless it's paired.

If you don't want to reset your watch then you're stuck,when you unpair a watch a backup is made and when you come to re-pair the watch you can restore this backup and not lose anything.
