New Apple One iCloud Family Storage

If I share my iCloud storage with family, will all their content be merged with mine, or be kept separate, like in their own folders so that we can choose what we see/search between the two+ separate AppleIDs?

It will be kept separate under their own Apple ID just like it is when not shared. Sharing a plan is primarily a billing thing. Also see the following from Share an iCloud storage plan with your family - Apple Support


When you share a storage plan, your photos and documents stay private and everyone keeps using their own accounts with iCloud—just like when you have your own storage plan. You simply share the space available in the iCloud storage plan with your family members, so you only have one plan to manage.
