Maybe.
1) Are you planning to run two different GPU-limited video processing applications at once? If so each could, with minor difficulty, be setup to use a different GPU.
2) Does your most frequently used or demanding application have application-level multi-GPU support? Application that do can split their load to run a little faster.
3) Do you need to connect more monitors than a single 580 will support? More GPUs provide more display output.
Otherwise no.

Forgot to mention: FCPX and Resolve are the two video editors I use. Thank you for the reply - looks as though I may need to go to the Radeon Pro Vega II MPX card...
