The iPad was set to automatically update the software. Now an app won't work....how do we go back to the software before this update?

There is no supported mechanism to downgrade iOS to an earlier version. For the app that doesn’t work, is there an update for it in the App Store? Or ask the developer about it.

Sorry, not possible. Apple have recently stopped digitally signing the preceding iOS/iPadOS 14.2.

Regression to an earlier version of iOS/iPadOS is not widely supported - except for a very limited period of time, after release of a new version, when it is possible to restore the immediately preceding [point] version.

When possible, restoring an earlier version completely wipes the device. You also need to consider that it is not possible to restore data to an earlier version of iOS/iPadOS than the version used to create the iCloud/iTunes backup.
