Encrypted DNS

I keep getting reports of unsecured DNS settings. Would love some decent references on setting up and controlling Encrypted DNS. My latest find was on my iPad in the settings app under wifi.

Details are in picture. Any insight on this topic would be great. The best reference I have found on the topic is from WWDC 2020. A video called “Enable encrypted DNS”. Using Xcode is over my head though. I hope one day I can grasp the concept of programming and development. For now I’d like a more user friendly solution. If anyone could help on this topic that would be great.
