A flawless upgrade does not void the warranty, but damage caused by user, unauthorized service, or out-of-spec parts is excluded and may void the warranty on everything else.

If you want to add your own RAM, DO NOT buy a 21.5-inch model. Their RAM is not user-upgradeable and trying to get into the sealed case will void the warranty.
The 27-inch has a user-accessible RAM door and Apple posts instructions on how to upgrade those.
Not as long as the one you buy has user upgradable RAM...
