Does Apple infringe on basic privacy?

Someone said to me "I'm pretty sure Apple is able to look at all of your activity on any Apple device and manipulate it if they like!" to which I immediately thought that this guy is a conspiracy theorist. Do you think this person is crazy? Why or why not? Be specific.
