transfer to new computer
Is it possible to transfer only some apps and data from my old computer to my new one?

If you use Setup Assistant of Migration Assistant, it's an all or nothing proposition. Meaning if you select that you want Apps migrated, they will all be migrated except any 32bit apps which will no longer run on Catalina and later versions of Mac OS.
