If you use Setup Assistant of Migration Assistant, it's an all or nothing proposition. Meaning if you select that you want Apps migrated, they will all be migrated except any 32bit apps which will no longer run on Catalina and later versions of Mac OS.

Well, consider this. Do the transfer and then simply delete whatever you no longer wish to keep. It shouldn't be a bid deal.
